- 4 large bell peppers (any color)
- 1 cup cooked crab meat
- 1 cup cooked shrimp, diced
- 1 cup cooked white rice
- 1 cup shredded cheddar cheese
- 2 tbsp lemon juice
- 2 tbsp fresh parsley, chopped
- 1 tsp garlic powder
- Salt and pepper to taste
- Olive oil for sautéing
Instructions
- Preheat oven to 375°F (190°C). Cut tops off bell peppers and remove seeds.
- In a skillet, heat olive oil over medium. Sauté diced shrimp until pink (3–5 minutes).
- In a bowl, combine cooked rice, crab meat, shrimp, cheese, lemon juice, parsley, garlic powder, salt, and pepper.
- Stuff each pepper generously with the mixture.
- Place stuffed peppers in a baking dish upright. Cover with foil and bake for 25 minutes. Remove foil and bake an additional 10 minutes until golden brown.
- Garnish with extra parsley before serving.
