  • 4 large bell peppers (any color)
  • 1 cup cooked crab meat
  • 1 cup cooked shrimp, diced
  • 1 cup cooked white rice
  • 1 cup shredded cheddar cheese
  • 2 tbsp lemon juice
  • 2 tbsp fresh parsley, chopped
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • Olive oil for sautéing

Instructions

  1. Preheat oven to 375°F (190°C). Cut tops off bell peppers and remove seeds.
  2. In a skillet, heat olive oil over medium. Sauté diced shrimp until pink (3–5 minutes).
  3. In a bowl, combine cooked rice, crab meat, shrimp, cheese, lemon juice, parsley, garlic powder, salt, and pepper.
  4. Stuff each pepper generously with the mixture.
  5. Place stuffed peppers in a baking dish upright. Cover with foil and bake for 25 minutes. Remove foil and bake an additional 10 minutes until golden brown.
  6. Garnish with extra parsley before serving.
