  • 1 cup low-fat cottage cheese
  • 1 cup fresh or canned pineapple chunks (well-drained)
  • 1/2 cup shredded unsweetened coconut
  • 1 1/2 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1/4 cup vegetable oil
  • 1 tsp vanilla extract
  • 1/4 tsp salt

Instructions

  1. Preheat oven to 350°F (175°C). Grease a muffin tin or line it with paper liners.
  2. In a large bowl, whisk together cottage cheese, eggs, vegetable oil, sugar, and vanilla extract until smooth.
  3. In another bowl, combine flour, baking powder, and salt. Gradually fold into the wet mixture until just combined.
  4. Gently fold in the pineapple chunks and shredded coconut.
  5. Fill muffin tins about 3/4 full with batter and bake for 20-25 minutes or until golden brown and a toothpick inserted comes out clean.
  6. Allow muffins to cool on a wire rack before serving.
