- 1 cup low-fat cottage cheese
- 1 cup fresh or canned pineapple chunks (well-drained)
- 1/2 cup shredded unsweetened coconut
- 1 1/2 cups all-purpose flour
- 2 tsp baking powder
- 1/2 cup granulated sugar
- 2 large eggs
- 1/4 cup vegetable oil
- 1 tsp vanilla extract
- 1/4 tsp salt
Instructions
- Preheat oven to 350°F (175°C). Grease a muffin tin or line it with paper liners.
- In a large bowl, whisk together cottage cheese, eggs, vegetable oil, sugar, and vanilla extract until smooth.
- In another bowl, combine flour, baking powder, and salt. Gradually fold into the wet mixture until just combined.
- Gently fold in the pineapple chunks and shredded coconut.
- Fill muffin tins about 3/4 full with batter and bake for 20-25 minutes or until golden brown and a toothpick inserted comes out clean.
