  • 1 cup small-curd cottage cheese
  • 1 cup diced fresh pineapple (or canned)
  • 1/2 cup unsweetened coconut flakes
  • 1 1/2 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1/4 cup vegetable oil
  • 1 tsp vanilla extract

Instructions

  2. In a large bowl, mix together the cottage cheese, eggs, vegetable oil, and vanilla extract until smooth.
