  • 2 cups low-sodium chicken broth
  • 1 medium onion, diced
  • 1 cup celery, finely chopped
  • 2 tsp fresh sage, chopped (or 1 tsp dried)
  • 1 tsp fresh thyme, chopped (or ½ tsp dried)
  • 2 large eggs, beaten
  • ½ cup unsalted butter, melted
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a large baking dish.
  2. In a skillet over medium heat, melt butter and sauté onions and celery until tender (about 5 minutes).
  3. In a large bowl, combine crumbled cornbread and sautéed vegetables. Gradually stir in chicken broth until just combined.
  4. Add sage, thyme, salt, pepper, and beaten eggs to the mixture; mix until evenly distributed.
  5. Pour the mixture into the prepared baking dish and bake uncovered for 30-40 minutes until the top is golden brown.
