  • 2 Cornish hens (12 lbs each)
  • 1 cup apple cider
  • 1/2 cup pure maple syrup
  • 2 tbsp Dijon mustard
  • 2 tbsp olive oil
  • 4 sprigs fresh thyme (or 1 tsp dried thyme)
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 425°F (220°C) and spray a baking dish with nonstick cooking spray.
  2. Rinse and pat the Cornish hens dry.
  3. In a bowl, whisk together apple cider, maple syrup, Dijon mustard, olive oil, salt, pepper, and chopped thyme.
  4. Place the hens breast-side up in the baking dish and pour half of the glaze over them.
  5. Roast for 45-50 minutes, basting with remaining glaze halfway through.
  6. Let rest for 10 minutes before carving and serving.
