  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup brown sugar
  • 2 large eggs (room temperature)
  • 1 tsp vanilla extract
  • 1 cup mixed dried fruits (raisins, cherries, apricots)
  • 1/2 cup chopped walnuts

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking pan with parchment paper.
  2. In a large bowl, whisk together flour, baking powder, cinnamon, nutmeg, and salt.
  3. In another bowl, cream softened butter and brown sugar until fluffy (about 2 minutes).
  4. Beat in eggs one at a time followed by vanilla extract until smooth.
  5. Gently fold in the dry mixture followed by mixed dried fruits and chopped walnuts.
  6. Pour batter into the prepared pan and spread evenly.
  7. Bake for 25-30 minutes or until golden brown; check doneness with a toothpick.
