  • 1 cup brandy
  • 2 cups all-purpose flour
  • 1 cup unsalted butter (softened)
  • 1 cup brown sugar
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • 4 large eggs
  • Zest of 1 orange
  • Zest of 1 lemon

Instructions

  1. Soak mixed dried fruits in brandy overnight for maximum flavor.
  2. Preheat your oven to 325°F (160°C). Grease a loaf pan.
  3. In a bowl, whisk together flour, baking powder, cinnamon, and nutmeg.
  4. In another bowl, cream softened butter and brown sugar until light and fluffy.
  5. Beat in eggs one at a time until fully incorporated.
  6. Gradually add dry ingredients to wet mixture until just combined.
  7. Fold in soaked fruits and citrus zest gently.
  8. Pour batter into the prepared loaf pan and bake for 1 to 1.5 hours or until golden brown and a toothpick inserted comes out clean.
