  • 2 sticks unsalted butter (1 cup)
  • 2 cups granulated sugar
  • 1 cup light brown sugar
  • 1 cup light corn syrup
  • 1/4 tsp baking soda
  • 2 tsp vanilla extract
  • 1/2 tsp sea salt

Instructions

  1. Pop the popcorn kernels using an air popper or stovetop method until you have about 12 cups of popped corn.
  2. Preheat your oven to 250°F (120°C) and line a large baking sheet with parchment paper.
  3. In a medium saucepan over medium heat, melt together butter, granulated sugar, brown sugar, corn syrup, and salt while stirring continuously until bubbly (about 5 minutes).
  4. Remove from heat and stir in vanilla extract and baking soda (it will bubble up).
  5. Pour the caramel sauce over the popped corn in a large bowl, gently mixing until every kernel is coated.
  6. Spread the caramel-coated popcorn evenly onto the prepared baking sheet. Bake for about 45 minutes, stirring every 15 minutes for even coating.
