  • 2 large fresh eggs
  • 2 tbsp extra virgin olive oil
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp paprika
  • Salt and pepper to taste
  • ¼ cup fresh parsley or cilantro, chopped

Instructions

  1. Rinse and drain the chickpeas thoroughly.
  2. In a skillet over medium heat, heat the olive oil. Add minced garlic, cumin, and paprika; sauté for about 1 minute until fragrant.
  3. Add the chickpeas to the skillet and cook for 5-7 minutes until golden and slightly crispy.
  4. Create space in the skillet for the eggs. Crack them over the chickpeas and cover with a lid. Cook for 3-4 minutes until whites are set but yolks remain runny.
  5. Garnish with chopped herbs before serving warm.
