  • 4 boneless, skinless chicken breasts
  • 3 cloves fresh garlic, minced
  • 1 cup all-purpose flour
  • 2 tbsp olive oil
  • ¼ cup freshly squeezed lemon juice
  • 2 tbsp capers
  • 1 cup low-sodium chicken broth
  • 4 tbsp butter
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Prepare the chicken by placing it between plastic wrap and pounding to about ½ inch thickness.
  2. Season the flour with salt and pepper; dredge each chicken breast in flour, shaking off excess.
  3. Heat olive oil in a skillet over medium-high heat; sear the chicken for 4-5 minutes on each side until golden brown.
  4. Add minced garlic and sauté until fragrant, about 30 seconds. Pour in chicken broth and deglaze the pan.
  5. Stir in lemon juice and capers; simmer for around 5 minutes until thickened.
  6. Remove from heat, stir in butter until melted, then serve with sauce drizzled over the chicken and garnish with parsley.
