- 4 boneless, skinless chicken breasts
- 1 cup Italian breadcrumbs
- 1 cup freshly grated Parmesan cheese (divided)
- 1 cup shredded mozzarella cheese
- 2 large eggs
- 2 tbsp olive oil
- 1 tsp garlic powder
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Pat the chicken breasts dry. In a bowl, mix mozzarella, half of the Parmesan, garlic powder, salt, and pepper.
- Stuff each chicken breast with the mixture and fold securely, using toothpicks if needed.
- Set up three bowls: one with beaten eggs, one with breadcrumbs mixed with remaining Parmesan, and one empty. Dip each stuffed chicken in egg then coat with breadcrumbs.
- Heat olive oil in a skillet over medium heat. Cook each pillow until golden brown on both sides (about 4-5 minutes per side).
- Transfer to a baking sheet and bake for 15-20 minutes until cooked through and cheese is bubbling.
