  • 1 cup long-grain white rice
  • 1 lb ground beef (lean)
  • 1 packet taco seasoning
  • 1 can (14.5 oz) diced tomatoes (no added sugar)
  • 1 cup shredded cheddar cheese (or Mexican blend)
  • ½ cup diced bell peppers
  • 1 medium onion, diced
  • 2 garlic cloves, minced
  • 2 cups low-sodium chicken broth
  • Fresh cilantro (optional)

Instructions

  1. In a large skillet over medium heat, add oil and sauté diced onions until translucent. Add minced garlic and cook until fragrant.
  2. Add ground beef to the skillet and cook until browned. Break apart with a spatula for even cooking.
  3. Stir in taco seasoning, diced tomatoes (with juices), and bell peppers; mix well.
  4. Add rinsed rice and chicken broth, bring to a boil, then reduce heat to low. Cover and simmer for about 15 minutes or until rice is cooked.
  5. Once rice is fluffy, sprinkle shredded cheese on top and cover until melted.
  6. Fluff with a fork, garnish with cilantro if desired, and serve hot.
