  • 1 lb thinly sliced ribeye or sirloin steak
  • 1 cup bell peppers (mixed colors), sliced
  • 1 cup sweet onions, sliced
  • 3 cloves garlic, minced
  • 2 cups sharp cheddar cheese, shredded
  • 2 cups rotini or penne pasta (uncooked)
  • 1 cup low-sodium beef broth
  • 2 tsp olive oil
  • Salt & pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet over medium heat, add olive oil and sauté sliced onions and bell peppers until they soften (about 5 minutes).
  3. Add thinly sliced steak and minced garlic; cook until browned, seasoning with salt and pepper.
  4. In a mixing bowl, combine cooked pasta with the sautéed veggie-steak mixture. Slowly stir in beef broth to coat evenly.
  5. Fold in half of the cheddar cheese before transferring everything to a greased baking dish. Top with remaining cheese.
  6. Bake uncovered for 20-25 minutes or until bubbly and golden brown on top.
