  • 1 cup granulated sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 3 large eggs
  • 1 cup whole-milk ricotta cheese
  • 1 cup heavy cream (cold)
  • 1/2 cup semi-sweet chocolate chips
  • 2 tsp pure vanilla extract
  • Zest of 1 lemon

Instructions

  1. Preheat oven to 350°F (175°C) and grease two round cake pans.
  2. In a bowl, mix flour, sugar, baking powder, and salt.
  3. In another bowl, whisk eggs and vanilla; add to dry ingredients and combine gently.
  4. Divide batter into pans and bake for 25-30 minutes until a toothpick comes out clean.
  5. While cooling, whip heavy cream until soft peaks form. Combine ricotta with powdered sugar and lemon zest; fold in whipped cream and chocolate chips.
  6. Once cakes are cool, layer one on a plate and add half the ricotta filling. Top with the second layer and remaining filling. Chill for at least an hour before serving.
