  • 1 lb shrimp, deveined
  • 3 cups cooked rice (preferably day-old)
  • 2 tbsp Cajun seasoning
  • 1 cup bell peppers, chopped (mixed colors)
  • 4 green onions, chopped
  • 3 cloves garlic, minced
  • 2 tbsp low-sodium soy sauce
  • 2 tbsp vegetable oil
  • 2 eggs, beaten

Instructions

  1. Prepare all ingredients by chopping bell peppers, green onions, and mincing garlic.
  2. Heat vegetable oil in a large skillet over medium-high heat.
  3. Sauté garlic and bell peppers until softened (about 2-3 minutes).
  4. Add shrimp and half of the Cajun seasoning; cook until pink (about 3-4 minutes).
  5. Stir in cooked rice and remaining Cajun seasoning; mix well.
  6. Push mixture to one side of the pan; scramble eggs on the empty side until set, then fold into the rice along with green onions.
