  • 9 lasagna noodles (no-boil)
  • 1 lb Cajun sausage (spicy or mild)
  • 15 oz whole milk ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 2 cups marinara sauce
  • 1 bell pepper (diced)
  • 1 onion (diced)
  • 2 tsp Cajun seasoning
  • Fresh parsley (for garnish)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat. Sauté diced onion and bell pepper until soft, about 5 minutes. Add Cajun sausage and cook until browned.
  3. In a bowl, mix ricotta cheese with Cajun seasoning and a pinch of salt.
  4. Spread marinara sauce in the bottom of a baking dish. Layer with noodles, half the sausage mixture, half the cheese mixture, and shredded mozzarella. Repeat layers.
  5. Cover with foil and bake for 25 minutes. Remove foil and bake an additional 15 minutes until golden brown.
  6. Let rest for 10 minutes before serving. Garnish with fresh parsley.
