- 9 lasagna noodles (no-boil)
- 1 lb Cajun sausage (spicy or mild)
- 15 oz whole milk ricotta cheese
- 2 cups shredded mozzarella cheese
- 2 cups marinara sauce
- 1 bell pepper (diced)
- 1 onion (diced)
- 2 tsp Cajun seasoning
- Fresh parsley (for garnish)
Instructions
- Preheat oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat. Sauté diced onion and bell pepper until soft, about 5 minutes. Add Cajun sausage and cook until browned.
- In a bowl, mix ricotta cheese with Cajun seasoning and a pinch of salt.
- Spread marinara sauce in the bottom of a baking dish. Layer with noodles, half the sausage mixture, half the cheese mixture, and shredded mozzarella. Repeat layers.
- Cover with foil and bake for 25 minutes. Remove foil and bake an additional 15 minutes until golden brown.
- Let rest for 10 minutes before serving. Garnish with fresh parsley.
