  • 1 1/3 cups (132g) pecans, chopped
  • 3 tablespoons (44.36g) salted butter
  • 2 cups (250g) all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 2/3 cup (151.33g) unsalted butter, softened
  • 1 1/2 cups (300g) granulated sugar
  • 2 eggs, at room temperature
  • 1 1/2 teaspoons vanilla extract
  • 1 cup (244g) milk

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In one bowl, whisk together flour and baking powder. In another bowl, cream softened butter and sugar until light and fluffy.
  3. Add eggs one at a time to the butter mixture, followed by vanilla extract.
  4. Gradually mix in dry ingredients alternately with milk until just combined.
  5. Fold in chopped toasted pecans and fill each liner about two-thirds full.
  6. Bake for 18-20 minutes or until a toothpick inserted comes out clean.
