- 1 cup Arborio rice
- 1 lb ground beef
- 1/4 cup Korean BBQ sauce
- 1 cup shredded cheese (mozzarella or cheddar)
- 2 eggs (beaten)
- 1 cup panko breadcrumbs
- 2 green onions (finely chopped)
- 1 tsp garlic powder
- Salt & pepper to taste
Instructions
- Rinse Arborio rice under cool water until clear. In a saucepan, combine rice with 3 cups of water; boil, then simmer covered for about 18 minutes until creamy.
- In a skillet over medium-high heat, cook ground beef with Korean BBQ sauce for 5-7 minutes until browned.
- In a large bowl, mix cooled rice with cooked beef and cheese until well combined.
- With wet hands, shape the mixture into golf ball-sized arancini.
- Dip each ball in beaten eggs followed by panko breadcrumbs for coating.
- Heat oil in a deep fryer or pot to 350°F (175°C). Fry arancini in batches for 4-5 minutes until golden brown. Drain on paper towels before serving.
