- 1 cup tomato sauce
- 2 tbsp low-sodium soy sauce
- 1 tbsp brown sugar
- 1 tsp allspice (pimento)
- 2 tbsp vegetable oil
- Salt & pepper to taste
Instructions
- Wash and pat dry chicken thighs. Chop onions, bell peppers, and carrots into even pieces.
- Marinate chicken with salt, pepper, garlic, and allspice for at least 30 minutes.
- Heat vegetable oil in a large pot over medium-high heat. Sear chicken until golden brown on both sides (approximately 5-7 minutes each side).
- Remove chicken from pot; sauté onions and garlic until fragrant (3-4 minutes).
- Stir in tomato sauce, soy sauce, and brown sugar; mix well.
- Return the chicken to the pot with sliced bell peppers and carrots. Add just enough water or broth to cover slightly.
- Bring to a gentle boil, then reduce heat to low and cover tightly. Simmer for 45-60 minutes until chicken is fork-tender.
