  • ¾ cup granulated sugar
  • ¾ cup brown sugar (packed)
  • 2 large eggs
  • 2 tsp vanilla extract
  • 1 cup semi-sweet chocolate chips
  • 1 cup heavy cream
  • 1 cup powdered sugar
  • ¼ cup cocoa powder (for drizzling)

Instructions

  1. Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a bowl, whisk together flour, baking powder, cocoa powder, and salt; set aside.
  3. In another bowl, cream softened butter with granulated and brown sugars until light and fluffy (about 3-4 minutes).
  4. Add eggs one at a time followed by vanilla extract; mix well.
  5. Gradually incorporate the dry ingredients into the wet mixture until just combined; fold in chocolate chips.
  6. Scoop dough onto prepared sheets, spacing them about two inches apart. Bake for 10-12 minutes until edges are set but centers are slightly underbaked.
  7. While cookies cool, whip heavy cream and powdered sugar until soft peaks form.
  8. Spread or pipe filling onto half the cookies and sandwich with the remaining halves. Drizzle melted chocolate over the top.
