  • 1 cup all-purpose flour
  • 1 cup rolled oats
  • 3/4 cup granulated sugar
  • 1/2 cup unsalted butter (softened)
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 2 tbsp lemon juice
  • 1/2 tsp cinnamon (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8-inch square baking pan or line it with parchment paper.
  2. In a large bowl, mix together flour, oats, sugar, baking powder, and salt.
  3. Cut in softened butter until the mixture resembles coarse crumbs.
  4. Gently fold in blueberries and lemon juice into half of the crumb mixture.
  5. Press half of the crumb mixture into the bottom of the prepared pan. Spread blueberry mixture on top and sprinkle remaining crumbs over it.
  6. Bake for 35-40 minutes or until golden brown. Let cool completely before slicing.
