- 2 bay leaves
- 2 lbs Russet potatoes, peeled and quartered
- ½ cup sour cream
- 4 tbsp unsalted butter
Instructions
- Chop vegetables uniformly for even cooking.
- In a large pot over medium-high heat, sear the beef chuck roast until browned on all sides (about 4-5 minutes each side).
- Remove the roast and sauté chopped onions and minced garlic until translucent (3-4 minutes).
- Return the beef to the pot; add beef broth until almost submerged; include carrots, thyme, and bay leaves. Bring to a simmer and cover tightly.
- Lower heat and cook gently for 3-4 hours until fork-tender.
- Meanwhile, boil quartered potatoes until tender (15-20 minutes). Drain and mash with butter and sour cream until smooth.
- Serve generous portions of beef with mashed potatoes, ladling gravy over everything.
