Description

Beef Manhattan is a comforting, one-pot meal that features tender beef chuck roast simmered in rich gravy, served alongside creamy mashed potatoes.   • 2 lbs beef chuck roast
  • 4 cups low-sodium beef broth
  • 1 large sweet onion, chopped
  • 3 medium carrots, sliced
  • 4 cloves garlic, minced
  • 2 tsp dried thyme
  • 2 bay leaves
  • 2 lbs Russet potatoes, peeled and quartered
  • ½ cup sour cream
  • 4 tbsp unsalted butter

Instructions

  1. Chop vegetables uniformly for even cooking.
  2. In a large pot over medium-high heat, sear the beef chuck roast until browned on all sides (about 4-5 minutes each side).
  3. Remove the roast and sauté chopped onions and minced garlic until translucent (3-4 minutes).
  4. Return the beef to the pot; add beef broth until almost submerged; include carrots, thyme, and bay leaves. Bring to a simmer and cover tightly.
  5. Lower heat and cook gently for 3-4 hours until fork-tender.
  6. Meanwhile, boil quartered potatoes until tender (15-20 minutes). Drain and mash with butter and sour cream until smooth.
  7. Serve generous portions of beef with mashed potatoes, ladling gravy over everything.
