  • 1 cup all-purpose flour
  • 2 tsp baking powder
  • 1 tsp ground cinnamon
  • 1/2 cup granulated sugar (plus extra for dusting)
  • 1 large egg
  • 1/4 cup milk (whole or buttermilk)
  • 2 tbsp melted butter

Instructions

  1. Preheat your oven to 350°F (175°C). Grease mini muffin pans or use silicone molds.
  2. In a large bowl, whisk together flour, baking powder, cinnamon, and sugar.
  3. In another bowl, mash the ripe bananas until smooth. Mix in the melted butter and egg until well combined.
