Baked Salmon Meatballs with Avocado Sauce are a deliciously healthy twist on traditional meatballs, bursting with flavor and easy to make.


Ingredients

  • 1 lb fresh salmon, chopped
  • 1 cup plain breadcrumbs
  • 2 large eggs
  • ¼ cup fresh parsley, chopped
  • ¼ cup fresh dill, chopped
  • 1 ripe avocado
  • 2 tbsp freshly squeezed lemon juice
  • 1 tsp garlic powder
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine chopped salmon, breadcrumbs, eggs, herbs, garlic powder, salt, and pepper; mix gently until just combined.
  3. Form the mixture into small balls about two inches in diameter and place them on the prepared baking sheet.
  4. Bake for 15-20 minutes until golden brown and cooked through.
  5. While baking, blend avocado with lemon juice and salt until smooth.
  6. Serve the meatballs warm with the avocado sauce drizzled on top.
