- 1 lb fresh salmon, chopped
- 1 cup plain breadcrumbs
- 2 large eggs
- ¼ cup fresh parsley, chopped
- ¼ cup fresh dill, chopped
- 1 ripe avocado
- 2 tbsp freshly squeezed lemon juice
- 1 tsp garlic powder
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl, combine chopped salmon, breadcrumbs, eggs, herbs, garlic powder, salt, and pepper; mix gently until just combined.
- Form the mixture into small balls about two inches in diameter and place them on the prepared baking sheet.
- Bake for 15-20 minutes until golden brown and cooked through.
- While baking, blend avocado with lemon juice and salt until smooth.
- Serve the meatballs warm with the avocado sauce drizzled on top.
