  • 24 ladyfingers
  • 1 cup brewed espresso or strong coffee (cooled)
  • 8 oz mascarpone cheese
  • 8 oz cream cheese (room temperature)
  • 1 cup granulated sugar
  • 2 tsp vanilla extract
  • 2 tbsp cocoa powder (for dusting)
  • 4 tbsp unsalted butter (melted)
  • Pinch of salt

Instructions

  1. Preheat oven to 350°F (175°C). Mix crushed ladyfingers with melted butter and press into the bottom of a springform pan.
  2. Bake crust for 10 minutes or until slightly golden. Allow it to cool.
  3. In a large bowl, blend mascarpone cheese, cream cheese, sugar, vanilla extract, and salt until smooth.
  4. Gradually mix in the cooled brewed coffee until well combined.
  5. Spoon half of the filling over the cooled crust and layer soaked ladyfingers dipped in coffee on top. Finish with the remaining filling.
  6. Refrigerate for at least 4 hours or overnight before serving.
