  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • ¾ cup granulated sugar
  • 1 ½ cups fresh strawberries, pureed
  • 16 oz cream cheese, softened
  • ½ cup sour cream
  • 1 tsp vanilla extract
  • 1 cup powdered sugar, sifted
  • 1 cup heavy whipping cream
  • 3 oz strawberry gelatin powder

Instructions

  1. Preheat oven to 350°F (175°C). Mix graham cracker crumbs and melted butter until combined; press into the bottom of a springform pan. Bake for 10 minutes until golden.
  2. In a bowl, beat softened cream cheese until smooth. Gradually add granulated sugar and blend until creamy. Mix in sour cream and vanilla extract.
  3. Fold in pureed strawberries gently to create swirls.
  4. Whip heavy cream until soft peaks form; fold into the strawberry mixture.
  5. Pour filling over the crust and smooth evenly. Bake for about 60 minutes or until edges set and center is slightly jiggly.
  6. Cool at room temperature then refrigerate for at least four hours before serving. Top with strawberry gelatin mixture if desired.
