  • 1 lb ribeye or sirloin steak
  • 4 oz gorgonzola cheese, crumbled
  • 8 oz fettuccine pasta
  • 1 cup heavy cream
  • ½ cup parmesan cheese, freshly grated
  • 3 cloves garlic, minced
  • 2 tbsp unsalted butter
  • Salt and pepper to taste

Instructions

  1. Season the steak generously with salt and pepper. Heat a skillet over medium-high heat, add oil, and sear the steak until golden brown on both sides (about 4-5 minutes per side). Remove from skillet and let rest.
  2. In the same skillet, reduce heat and add butter. Once melted, stir in minced garlic until fragrant (about 1 minute).
  3. Gradually pour in heavy cream while stirring continuously until thickened. Add gorgonzola cheese and mix until melted.
  4. Cook fettuccine according to package instructions; drain but reserve some pasta water. Add pasta to the skillet with the sauce along with parmesan cheese; toss gently.
  5. Adjust seasoning as needed and add reserved pasta water if sauce is too thick. Serve hot with extra parmesan or parsley for garnish.
