Description

  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • 1 cup pumpkin puree
  • 1 cup mascarpone cheese (room temperature)
  • ½ cup espresso or strong coffee (freshly brewed)
  • 1 cup heavy cream
  • 2 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ¼ cup cocoa powder

Instructions

  1. Preheat oven to 350°F (175°C) and grease two round cake pans.
  2. In a mixing bowl, combine flour, sugar, cinnamon, nutmeg, and a pinch of salt.
  3. In another bowl, whisk together eggs and pumpkin puree until smooth. Gradually mix in the dry ingredients until fully combined. Pour into prepared pans.
  4. Bake for 25-30 minutes or until a toothpick comes out clean. Cool completely before removing from pans.
  5. While cakes cool, whip heavy cream in one bowl until soft peaks form. In another bowl, blend mascarpone with sugar and espresso until creamy.
  6. Assemble by layering the cakes with mascarpone filling in between each layer. Dust the top with cocoa powder and refrigerate for at least 4 hours before serving.
