  • 3 ripe bananas (mashed)
  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • 2 tsp baking powder
  • ½ tsp salt
  • 2 large eggs
  • ½ cup creamy peanut butter
  • ½ cup unsalted butter (softened)
  • ¼ cup unsweetened cocoa powder
  • ¼ cup whole milk

Instructions

  1. Preheat your oven to 350°F (175°C). Grease two 9-inch round cake pans.
  2. In a mixing bowl, mash the ripe bananas until smooth.
  3. In another bowl, whisk together flour, sugar, baking powder, and salt.
  4. Add eggs and mashed bananas to the dry ingredients; mix gently until combined.
  5. Divide the batter between the prepared pans and bake for 25-30 minutes or until a toothpick comes out clean.
  6. Allow cakes to cool for 10 minutes before transferring them to wire racks.
  7. For the frosting, beat peanut butter and softened butter until fluffy; gradually add cocoa powder and milk until desired consistency is reached.
  8. Assemble by spreading frosting on top of one cooled layer, adding the second layer, and frosting the top.
