  • 6 large eggs
  • 1 cup heavy cream
  • 1 cup whole milk
  • 2 tsp pure vanilla extract
  • 1/2 cup light brown sugar
  • 1 tsp ground cinnamon
  • Pinch of nutmeg (optional)
  • 1/4 cup granulated sugar (for topping)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cut the brioche into thick slices and arrange in a greased baking dish, overlapping slightly.
  3. In a mixing bowl, whisk together eggs, heavy cream, milk, vanilla extract, brown sugar, cinnamon, and nutmeg until smooth.
  4. Pour the custard mixture evenly over the bread slices and press down gently to ensure soaking.
  5. Cover with plastic wrap and refrigerate for at least 2 hours or overnight.
  6. Before baking, remove the wrap and sprinkle granulated sugar on top.
