  • 1 cup low-sodium chicken broth

  • 2 tsp fresh thyme leaves
  • 1 cup carrots, sliced
  • 1 cup peas (fresh or frozen)
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Begin by gathering all ingredients to ensure a smooth cooking process.
  2. Heat olive oil in a large skillet over medium-high heat. Season chicken breasts with salt and pepper. Sear for about 5 minutes on each side until golden brown. Remove chicken from skillet and set aside.
  3. In the same skillet, sauté diced onions and minced garlic for about 3-4 minutes until translucent.
  4. Pour in Riesling wine and scrape any browned bits from the pan; simmer for 2-3 minutes.
  5. Add chicken broth and heavy cream; return seared chicken to the pan and cover well with sauce. Simmer for approximately 20 minutes until cooked through.
  6. Add sliced carrots and peas in the last 5 minutes of cooking time, then stir in fresh thyme just before serving.
