  • 3 tablespoons unsalted butter
  • 2 medium yellow onions, sliced
  • 2 cups vegetable broth
  • 1 tablespoon fresh thyme leaves
  • Salt and pepper to taste

Instructions

  1. In a large skillet, melt 2 tablespoons of butter over medium heat. Add sliced onions and sauté until golden brown and caramelized (15-20 minutes), stirring occasionally.
  2. Add the rice to the skillet and toast for 2-3 minutes until fragrant.
  3. Pour in the vegetable broth and thyme. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes until liquid is absorbed.
  4. Remove from heat but keep covered for an additional 5 minutes. Stir in the remaining tablespoon of butter until melted.
