  • 1 can (14.5 oz) fire-roasted diced tomatoes
  • 1 can (15 oz) kidney beans, drained
  • 1 medium yellow onion, chopped
  • 3 cloves garlic, minced
  • 2 tsp cumin powder
  • 2 tsp chili powder (adjust to taste)
  • 1 bell pepper, chopped
  • 1 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté chopped onions and bell peppers until softened.
  2. Add ground turkey to the pot, stirring until browned with no pink remaining.
  3. Stir in minced garlic, cumin powder, and chili powder; cook for about 1 minute until fragrant.
  4. Add diced tomatoes and kidney beans; mix well.
  5. Bring to a boil then reduce heat to low. Let simmer uncovered for about 30 minutes until thickened.
