Ingredients
- 4 medium russet potatoes (about 2 lbs)
- 1 lb lean ground beef or turkey
- 1 packet taco seasoning (or homemade equivalent)
- 1 cup shredded sharp cheddar cheese
- ¼ cup chopped fresh cilantro
- ½ cup sour cream or Greek yogurt
- 1 cup chopped tomatoes (or cherry tomatoes)
- ½ cup sliced jalapeños (optional)
Instructions
- Preheat oven to 400°F (200°C). Scrub potatoes clean and poke holes in them with a fork.
- Bake the potatoes on a parchment-lined baking sheet for 45-60 minutes until tender.
- In a skillet over medium-high heat, brown the ground meat until cooked through; drain excess fat.
- Stir in taco seasoning and ¼ cup water; simmer for about 5 minutes until thickened.
- Once potatoes are baked, slice them open lengthwise and fluff the insides with a fork.
- Fill each potato with the meat mixture and top with cheese. Return to the oven for about 5 minutes to melt the cheese.
- Remove from oven and add chopped tomatoes, jalapeños, cilantro, and a dollop of sour cream or Greek yogurt. Serve hot.
