  • 1 lb shrimp, deveined
  • 8 oz egg noodles
  • 1 cup bell peppers, sliced (mixed colors)
  • 1 cup broccoli florets
  • 3 cloves garlic, minced
  • 4 tbsp low-sodium soy sauce
  • 2 tbsp sesame oil
  • 1-inch fresh ginger, grated
  • 2 green onions, chopped (for garnish)
  • 1 tsp chili flakes (optional)

Instructions

  1. Prep shrimp by peeling and deveining if not already done. Chop vegetables into bite-sized pieces.
  2. Boil water in a large pot and cook egg noodles according to the package instructions until al dente. Drain and set aside.
  3. In a large wok or skillet over medium-high heat, add sesame oil. Once hot, sauté minced garlic and grated ginger for about 30 seconds until fragrant.
  4. Add shrimp to the pan, cooking until pink (about 3-4 minutes). Then stir in bell peppers and broccoli, sautéing until just tender.
  5. Toss cooked noodles into the pan along with soy sauce and chili flakes (if using). Stir well for another 2-3 minutes until heated through.
  6. Garnish with chopped green onions before serving hot.
