  • 1 cup diced bell peppers (mixed colors)
  • 1 medium yellow onion, finely chopped
  • 2 celery stalks, diced
  • 3 garlic cloves, minced
  • 2 tsp Cajun seasoning
  • 2 cups low-sodium chicken broth
  • 2 green onions, sliced (for garnish)
  • Pepper sauce (optional)

Instructions

  1. Heat olive oil in a large skillet over medium heat. Sauté the chopped onion until translucent.
  2. Add diced bell peppers and celery; cook for about 3-4 minutes until softened.
  3. Stir in minced garlic and shrimp; cook until shrimp turn pink and opaque (about 3-5 minutes).
  4. Mix in rinsed rice and Cajun seasoning. Pour in chicken broth, bring to a boil, then reduce heat to simmer. Cover and cook for approximately 20 minutes.
  5. Fluff the rice with a fork, stir in sliced green onions just before serving, and drizzle with pepper sauce if desired.
