  • 1 pound shrimp, deveined
  • 1 ripe avocado, sliced
  • 1 cup fresh corn kernels (or frozen)
  • 1 small red onion, finely chopped
  • 1 cup cherry tomatoes, diced
  • Juice of 1 lime
  • 1/4 cup fresh cilantro, chopped
  • 1/2 cup plain Greek yogurt
  • 2 teaspoons cumin
  • 2 teaspoons paprika
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. In a bowl, mix olive oil, cumin, paprika, salt, and pepper. Add shrimp and let marinate while preparing other ingredients.
  2. In another bowl, combine corn, red onion, cherry tomatoes, cilantro, lime juice, salt, and pepper. Mix well.
  3. Preheat grill to medium-high heat. Skewer marinated shrimp (if using wooden skewers, soak first). Grill shrimp for 2-3 minutes on each side until pink and opaque.
  4. Layer grilled shrimp over rice or greens in bowls. Top with avocado slices and generous scoops of corn salsa.
  5. In a small bowl, combine Greek yogurt with lime juice and a pinch of salt until smooth. Drizzle over assembled bowls and garnish with extra cilantro or lime wedges.
