  • 2 lbs bone-in beef chuck
  • 4 cups beef broth
  • 1 medium onion, chopped
  • 4 cloves fresh garlic, minced
  • 3 dried guajillo peppers, seeded and chopped
  • 4 oz ramen noodles (fresh or dried)
  • 1 cup tortilla chips (for garnish)
  • 1/4 cup fresh cilantro (for garnish)
  • 2 lime wedges (for garnish)
  • Salt to taste

Instructions

  1. Sear the beef chuck in a large pot until browned on all sides for flavor development.
  2. Add chopped onions, garlic, and guajillo peppers; sauté until onions are translucent and fragrant.
  3. Pour in beef broth and enough water to cover the ingredients; bring to a boil then reduce heat and simmer for about two hours.
  4. Remove the beef from the pot, shred it using two forks, and set aside.
  5. Cook ramen noodles according to package instructions; drain but reserve some pasta water.
  6. In serving bowls, layer cooked noodles, shredded beef, and ladle over the broth. Top with tortilla chips, cilantro, and lime wedges.
