Ingredients

  • 4 cups romaine lettuce, chopped
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red onion, thinly sliced
  • 1 cup bell peppers (red & yellow), diced
  • 3/4 cup feta cheese, crumbled
  • 1/4 cup extra virgin olive oil
  • Juice of 1 lemon
  • Salt and pepper to taste

Instructions

  1. Wash all vegetables under cold water. Chop the romaine lettuce into bite-sized pieces and place it in a large bowl.
  2. Halve the cherry tomatoes and dice the cucumbers, bell peppers, and red onion. Add these to the bowl with the lettuce.
  3. Crumble feta cheese over the top of the salad.
