  • 2 lbs beef chuck roast
  • 1 lb baby potatoes
  • 45 cloves fresh garlic, minced
  • 4 tbsp unsalted butter
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. Cut the beef chuck roast into bite-sized pieces and rinse the baby potatoes.
  2. Place the beef in the bottom of the slow cooker, followed by the baby potatoes, minced garlic, thyme, salt, and pepper.
  3. Melt the butter in a small saucepan over low heat and pour it over the ingredients in the slow cooker.
  4. Cover and cook on low for 6-8 hours or high for 4 hours until the beef is tender and potatoes are cooked through.
  5. Gently stir to combine before serving hot.
