- 1 lb lean ground beef
- 1 medium onion, diced
- 2 bell peppers, diced
- 1 can (14.5 oz) diced tomatoes with green chilies
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 cup frozen corn
- 2 cups shredded cheese (cheddar and Monterey Jack blend)

Instructions
- Brown the ground beef in a skillet over medium heat; drain excess fat.
- In a slow cooker, combine browned beef with onion, bell peppers, tomatoes, kidney beans, corn, and seasonings.
- Mix well to combine all ingredients.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- About 30 minutes before serving, sprinkle cheese on top and cover until melted.
- Serve warm with chopped green onions as garnish.
