Description

Slow Cooker Cowboy Casserole is the ultimate comfort food that brings together hearty flavors and simple preparation.


Ingredients

  • 1 lb lean ground beef
  • 1 medium onion, diced
  • 2 bell peppers, diced
  • 1 can (14.5 oz) diced tomatoes with green chilies
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 cup frozen corn
  • 2 cups shredded cheese (cheddar and Monterey Jack blend)
  • chili powder
  • cumin

Instructions

  1. Brown the ground beef in a skillet over medium heat; drain excess fat.
  2. In a slow cooker, combine browned beef with onion, bell peppers, tomatoes, kidney beans, corn, and seasonings.
  3. Mix well to combine all ingredients.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  5. About 30 minutes before serving, sprinkle cheese on top and cover until melted.
  6. Serve warm with chopped green onions as garnish.
