  • 1 lb boneless, skinless chicken breasts (cut into bite-sized pieces)
  • 2 cups fresh bell peppers (mixed colors, chopped)
  • 1 cup red onion (chopped)
  • 1 cup roasted cashews (unsalted)
  • 4 garlic cloves (minced)
  • ¼ cup low-sodium soy sauce
  • 2 tbsp honey
  • 2 tbsp olive oil
  • Cilantro (optional, for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
  2. Season the chicken pieces with salt and pepper and place them on the prepared sheet pan.
  3. Add chopped bell peppers and red onion around the chicken.
  4. In a bowl, whisk together minced garlic, soy sauce, honey, and olive oil. Drizzle over the chicken and vegetables.
  5. Toss everything together until well-coated and spread evenly on the sheet pan.
  6. Roast in the preheated oven for 20-25 minutes.
  7. About 5 minutes before finishing cooking, sprinkle roasted cashews on top and return to the oven to toast slightly.
  8. Serve hot, garnished with fresh cilantro if desired.
