  • 8 oz penne pasta
  • 1 can (5 oz) good-quality tuna packed in olive oil, drained
  • 1 cup heavy cream
  • 3 cloves garlic, minced
  • ½ cup grated Parmesan cheese
  • 2 cups fresh spinach (or 1 cup frozen)
  • 1 tbsp lemon juice
  • Salt and pepper to taste

Instructions

  1. Cook the pasta in salted boiling water until al dente, following package instructions. Drain and set aside.
  2. In the same pan, heat a drizzle of olive oil over medium heat. Sauté the minced garlic until fragrant. Add the spinach and cook until wilted.
  3. Fold in the drained tuna and heavy cream, stirring well to combine. Allow to simmer for a few minutes.
  4. Gradually mix in the grated Parmesan cheese until melted and creamy. Stir in lemon juice for brightness.
  5. Add the cooked pasta back into the pan, tossing gently to coat with sauce.
  6. Serve hot, garnished with extra Parmesan if desired.
