  • 34 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (15 oz) black beans, rinsed
  • 4 cups chicken broth
  • 1 cup corn kernels (fresh or frozen)
  • 1 tablespoon cumin powder
  • 1 tablespoon chili powder
  • salt & pepper to taste
  • Juice of 1 lime

Instructions

  1. Prep your ingredients by chopping vegetables and rinsing the black beans.
  2. In a large pot over medium heat, add olive oil. Sauté onions until translucent (about 5 minutes), then add garlic and cook for another minute.
  3. Add chicken breasts to the pot and sear both sides until lightly browned (about 3 minutes per side).
  4. Stir in diced tomatoes (with juices), black beans, corn, spices, and chicken broth; mix well.
  5. Bring to a gentle boil, then reduce heat and simmer uncovered for about 25 minutes until chicken is cooked through.
  6. Remove chicken from the pot; shred it using two forks before returning it to the soup. Squeeze lime juice over the top before serving.
