  • 3 boneless, skinless chicken breasts (about 1 lb)
  • 8 oz flat rice noodles
  • 1 cup bell peppers (sliced)
  • 1 cup bean sprouts
  • 2 large eggs
  • 1/4 cup chopped green onions
  • 1/4 cup crushed peanuts (toasted)
  • 2 tbsp tamarind paste
  • 3 tbsp low-sodium soy sauce
  • 1 tbsp fish sauce
  • 2 tbsp brown sugar
  • Juice of 1 lime

Instructions

  1. Prep all ingredients by chopping vegetables and soaking rice noodles according to package instructions.
  2. Heat oil in a large skillet over medium heat. Cook chicken until golden brown and cooked through, about 5-7 minutes.
  3. Add sliced bell peppers and bean sprouts; stir-fry for about 3-4 minutes until softened.
  4. Add soaked rice noodles to the skillet and mix thoroughly.
  5. In a bowl, whisk together tamarind paste, soy sauce, fish sauce, brown sugar, and lime juice; pour over noodle mixture and stir well.
  6. Push noodles to one side of the skillet, crack in eggs, scramble until set, then mix into the dish.
  7. Serve garnished with crushed peanuts and chopped green onions.
