- 8 oz flat rice noodles

- 2 tbsp tamarind paste
- 3 tbsp low-sodium soy sauce
- 1 tbsp fish sauce
- 2 tbsp brown sugar
- Juice of 1 lime

- Heat oil in a large skillet over medium heat. Cook chicken until golden brown and cooked through, about 5-7 minutes.
- Add sliced bell peppers and bean sprouts; stir-fry for about 3-4 minutes until softened.
- Add soaked rice noodles to the skillet and mix thoroughly.
- In a bowl, whisk together tamarind paste, soy sauce, fish sauce, brown sugar, and lime juice; pour over noodle mixture and stir well.
- Push noodles to one side of the skillet, crack in eggs, scramble until set, then mix into the dish.
