Description

Ingredients

  • 1 can (15 oz) chickpeas, drained and rinsed
  • 4 cups fresh spinach, chopped
  • 1 large onion, finely chopped
  • 4 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 2 tsp cumin seeds
  • 2 tsp coriander powder
  • 1 tsp garam masala
  • 1/2 cup coconut cream (optional)
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Rinse spinach under cold water. If using dried chickpeas, soak overnight and rinse before use.
  2. Heat olive oil in a large pan over medium heat. Add cumin seeds and sauté until fragrant (about 30 seconds).
  3. Add chopped onions and sauté until golden brown.
  4. Stir in minced garlic and grated ginger; sauté for 1 minute until fragrant.
  5. Sprinkle in coriander powder, salt, and pepper; cook for another 30 seconds to toast the spices.
  6. Add chickpeas and spinach; stir gently until spinach wilts (3-5 minutes).
  7. If using, pour in coconut cream and simmer on low heat for an additional 5 minutes.
  8. Serve warm, garnished with garam masala alongside naan or rice.
