  • 1 cup Ruby Red Grapefruit juice (freshly squeezed)
  • Zest of 1 Ruby Red Grapefruit
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter (melted)
  • 2 large eggs
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • Pinch of salt
  • Powdered sugar (for dusting)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8×8-inch baking pan.
  2. In a mixing bowl, combine melted butter, granulated sugar, flour, and salt until crumbly. Press into the bottom of the prepared pan.
  3. Bake the crust for 15-20 minutes until lightly golden.
  4. In another bowl, whisk together grapefruit juice, zest, eggs, sugar, flour, and baking powder until smooth.
  5. Pour the filling over the warm crust and bake for an additional 20-25 minutes until slightly jiggly in the center.
  6. Cool completely before dusting with powdered sugar and cutting into squares.
