  • 2 Cornish hens (about 1.5 lbs each)
  • 3 tbsp olive oil
  • 2 tsp fresh rosemary, chopped
  • 2 tsp fresh thyme, chopped
  • 4 cloves garlic, minced
  • Juice of 1 lemon
  • Salt and pepper to taste
  • 2 cups carrots and potatoes, cut into chunks (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Pat the Cornish hens dry with paper towels. Rub each hen with olive oil, then season generously inside and out with salt, pepper, minced garlic, rosemary, and thyme.
