  • 4 slices sourdough bread
  • 1 cup fresh ricotta cheese
  • 1 cup mixed mushrooms (shiitake and cremini), sliced
  • 6 fresh sage leaves
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a skillet over medium heat, add 1 tbsp of olive oil, then sauté the sliced mushrooms with salt and pepper until golden brown, about 5-7 minutes.
  3. Add fresh sage leaves during the last minute of cooking.
  4. Place sourdough slices on a baking sheet, drizzle with remaining olive oil, and toast in the oven until golden brown (around 10 minutes).
  5. Spread ricotta on each toasted slice, top with sautéed mushrooms and sage mixture.
  6. Serve immediately and enjoy!
