  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • ⅓ cup granulated sugar (for crust)
  • 24 oz cream cheese, softened
  • 1 cup sour cream
  • 1 cup granulated sugar (for filling)
  • 4 large eggs
  • 2 cups tart apples, diced (like Granny Smith)
  • 1 tsp cinnamon
  • 2 tbsp fresh lemon juice
  • ½ cup brown sugar
  • 1 cup rolled oats

Instructions

  1. Preheat your oven to 325°F (160°C). In a bowl, mix graham cracker crumbs, melted butter, and ⅓ cup sugar. Press into the bottom of a springform pan.
  2. Beat softened cream cheese until smooth; add sour cream and 1 cup sugar. Mix in eggs one at a time until fully blended.
  3. Toss diced apples with lemon juice and cinnamon; fold into the cheesecake batter.
  4. Pour filling over crust and bake for 60-70 minutes until slightly jiggly in the center.
  5. For the crumble topping, mix oats, brown sugar, flour, cinnamon, and melted butter until crumbly. Sprinkle over cheesecake after baking for 40 minutes.
  6. Turn off the oven and cool cheesecake inside for an hour before refrigerating for at least four hours.
